Managing GERD with Flavorful Eats

Eating to manage GERD can be tricky. When you’re ready to eat a greater variety of foods, you might still be fine-tuning just how much and how often you can tolerate certain ingredients. The great thing about GERD management, however, is that you can begin to experience a greater depth of flavor and satisfaction. Here is a recipe you can enjoy whether you’re on a healing program for GERD or managing it to prevent acid reflux.

Flavor Boosting Tips:

  1. One simple way to enhance the flavors in your meals is to include a bit of salt. Salt can brighten the natural flavors of your fruits, vegetables, and lean proteins. It can also enhance sweetness. 
  2. Another tip for enriching sweetness is to add a bit of Monkfruit sweetener. I use OFF SUGAR Monkfruit sweetener, as it tastes very similar to sugar. And you don’t need much to boost the sweetness.

Simple Apple Crumble

This delicious apple treat can be served warmed or room temperature. Prepare as instructed and use oven-friendly ramekins to bake at 350ºF until apples have softened. You may also enjoy prepare it ahead of time, refrigerate overnight, and enjoy the next day. The apples will have softened and you’ll have a convenient ready-to-eat treat you can serve over plain, low-fat Greek yogurt for a breakfast option.

Serving suggestion: Top with a dollop of labneh or plain, low-fat Greek yogurt and garnish with basil.

Note: This recipe combines apples, walnuts, and naturally sweet dates for a satisfying snack or dessert. While these ingredients are delicious on their own, a wee bit of salt and a touch of Monkfruit sweetener give it that extra touch.

Ingredients
  

  • 2 small apples peeled, chopped
  • 3 tbsp walnuts
  • 2 tsp cinnamon
  • 3 small dates small, pitted
  • 1 pinch salt a wee pinch is all you need
  • 1 tsp Monkfruit sweetener you can add as much as 2 teaspoons

Instructions
 

  • Divide apples into two ramekins or small bowls.
  • Combine walnuts, cinnamon, dates, salt, and sweetener into a food processor or high-speed blender and process until it resembles a crumble.
  • Spoon 2 tablespoons of the crumble onto each portion of apples.
  • Serving Suggestion: Top each with a dollop of labneh or plain, low-fat Greek yogurt and garnish with a leaf of basil.
