Mango Mudslide – A Refreshingly Cool Smoothie Made with Lifeway Kefir

A Refreshing Kefir-based Smoothie!

I’ve taken the challenge to create a delicious recipe using one of Lifeway’s smoothie products including 2 plant-protein and 2 milk-based. I chose the whole milk kefir because I wanted to celebrate the fact that cow’s milk naturally provides protein, calcium, vitamin D. And I love the slogan #dairynourisheslife. I believe in a plant-based diet and all those new products out there to support (I actually really like Lifeway’s plant-based kefir made with pea protein – even the plain). But I’m here to celebrate dairy because I believe all fits can fit/support a healthy lifestyle.

So welcome the Mango Mudslide! I’ve named it as for the tropical take on a mudpie treat (one that is generally made with Oreo cookie crumbs and coffee/chocolate ice-cream). I’ve used graham cracker crumbles and shredded coconut as an alternative to ground chocolate cookie base and a high-bred of ice-cream meets popsicle in the frozen mango part of this treat.

After being frozen for a period of over 3 hours, the creamy base will solidify like a popsicle. But upon defrosting it will resemble and have the creamy mouthfeel of a scoop of ice-cream. I liken it to a cream-based popsicle. Served over shredded coconut and and GF homemade graham cracker crumbles, you’ll notice the beauty of erosion as the frozen mango cream starts to melt – blending the textures of the cracker and coconut with the icy, mango cream — resembling a delicious “mudslide” of flavor, texture and delight.

 

It’s made with Lifeway Kefir and this adds a nutritional benefit to the dish. Kefir products provide probiotics than can support digestion, immunity, and overall health. But just what are probiotics? Probiotics are strains of live bacteria found in foods like yogurt and kefir that help restore the balance of gut bacteria. A good balance means improved digestion and less bloating.

Lifeway Kefir is a cultured milk drink that is high in protein, calcium and vitamin D. And yes, it contains probiotics! Each cup of kefir contains 12 live and active cultures.

 

Mango Mudslide - An Refreshingly Cool Smoothie

Servings 8 servings

Ingredients
  

  • 2 cups Lifeway Kefir whole milk
  • 3/4 cup chopped mango fresh or frozen
  • 1/4 cup maple syrup
  • _____________________
  • 1 cup oats
  • 1 cup coconut flakes unsweetened
  • 4 Tbsp maple syrup
  • 1 Tbsp coconut oil
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • 1/8 tsp celtic salt
  • 1 egg white or 1 flax egg

Instructions
 

  • For the mango ice-cream: Puree mango in a high speed blender in food processor until smooth.
  • Pour into a mixing bowl and stir in Lifeway kefir and maple syrup until well blended.
  • Freeze for 2-3 hours until reaches the consistency of creamy ice-cream.
  • Note: If you leave overnight, you can simply take out to defrost until it reaches the ideal ice-cream texture you prefer.
  • Preheat oven to 350ºF for the GF graham cracker crumbles.
  • In a high speed food processor, process oats, coconut, maple syrup, cinnamon, vanilla, sea salt until forms fine crumbles. Remove and place into a bowl. Stir coconut oil and 1 egg white to hold the ingredients together (or mix in 2 Tbsp flax soaked with 1 Tbsp water for a "flax egg".
  • Place in parchment-lined square pan and press until it forms an even layer on bottom of pan.
  • Heat for 20-25 minutes or until starts to brown and forms a solid layer.
  • Cool and break into crumbles.
  • Scoop frozen mango mixture into cups, top with graham crumbles. Optional: Garnish with unsweetened coconut flakes.
