Savory Cottage Cheese with Basil and Pinenuts

Made with the simplicity of pine nuts, basil and a drizzle of oil, this one packs in the protein with the benefit of cottage cheese! And it’s a good source of calcium, too. #dairynourisheslife

Do you have a favorite “dairy cream” (perhaps you’ve tried my Savory Double Cream Cottage Cheese)? What’s your favorite type of cottage cheese? Like the large curd or the small curd, perhaps a brand with a tight curd, less whey? I think this savory blend will be great with any kind you choose. When it comes to your ingredients, fresh is best. I absolutely love the smell of fresh basil, it’s so aromatic and full of flavor. When making this dish, or any basil inspired recipe, if it’s less than green, sturdy (ie limp and turning brown), it won’t be as tasty. When it comes to the pinenuts, I keep them in the freezer and sometimes enjoy the intenser flavor that comes from toasting them. *And when it comes to my cottage cheese, I prefer wholesome, no additives (i.e. stabilizers, thickeners, artificial preservatives), organic, non-gmo, and made from the milk grass-fed cows.

Be cottage cheese inspired with this simple tasty recipe. Here’s my simple Recipe for One:

Basil Pinenut Cottage Cheese Delight

Prep Time 5 minutes
Total Time 5 minutes
Servings 1 serving

Ingredients
  

  • 1/2 cup cottage cheese
  • 2 Tbsp pinenuts
  • 6-8 leaves of basil cut into pieces
  • 1 tsp olive oil
  • sea salt to taste optional

Instructions
 

  • Scoop cottage cheese into a bowl.
  • Sprinkle on pinenuts.
  • Toss in basil.
  • Add a drizzle of olive oil - about 1 tsp
  • Mix in sea salt to taste (optional)
