When it comes to your ingredients, fresh is best. I absolutely love the smell of fresh basil, it’s so aromatic and full of flavor. When making this dish, or any basil inspired recipe, if it’s less than green, sturdy (ie limp and turning brown), it won’t be as tasty. When it comes to the pinenuts, I keep them in the freezer and sometimes enjoy the intenser flavor that comes from toasting them. *And when it comes to my cottage cheese, I prefer wholesome, no additives (i.e. stabilizers, thickeners, artificial preservatives), organic, non-gmo, and made from the milk grass-fed cows.

Basil Pinenut Cottage Cheese Delight
Ingredients
- 1/2 cup cottage cheese
- 2 Tbsp pinenuts
- 6-8 leaves of basil cut into pieces
- 1 tsp olive oil
- sea salt to taste optional
Instructions
- Scoop cottage cheese into a bowl.
- Sprinkle on pinenuts.
- Toss in basil.
- Add a drizzle of olive oil - about 1 tsp
- Mix in sea salt to taste (optional)
