Let’s face it, once Halloween comes, the holiday season is here how fitting it is to be making “Red Velvet” treats. Bring it on with these simple, no-bake energy bites made with the goodness of beets and other wholesome ingredients.
When it comes to making treats for my family, I like to be in charge of the ingredients they contain. That doesn’t mean I don’t sometimes opt for a decadent treat like Ina Garten’s outrageous brownies. It’s just that most of the time I chose to bake or assemble a treat, I like to find wholesome ways of using less (or no) added sugars and bumping up the quality of its nutritional value by including whole food ingredients like oats, nuts and even nutrient-dense powders, like @glean‘s beet powder, pumpkin powder and sweet potato powder – each a dehydrated, ground version of its whole food.
I started with a Red Velvet cookie, which turned out great BTW, but I wanted a treat that didn’t use butter, sugar (or a moderate amount of granulated sweetener like no-net carb Allulose or Swerve) or require baking time in the oven. I’ll be using the oven plenty the week of Thanksgiving. These energy bites use the sweetness of beet powder, carob, date syrup (just dates) and just a small amount of Allulose to get the desired sweet taste without the use of added sugars.

Here is an example of the velvety red hue you’ll get when you bite into one of my Red Velvet energy bites. It’s amazing the gorgeous hue from the combo of the blend combined with the bright red/pinkness of the beets. Check out the recipe below!:
Red Velvet Energy Bites
Ingredients
- 2 Tablespoons @glean pumpkin powder
- 2 Tablespoons @glean sweet potato powder
- 4 Tablespoons @glean beet powder
- 1 Tablespoon cocoa or carob powder*
- 1/4 cup almond meal
- 1/4 cup oats
- 2 Tablespoon peanut butter all natural
- 1 Tablespoon date syrup or maple syrup
- 1-2 Tablespoons @keystonepantry Allulose or Swerve Erythritol sweetener
- 1/4 cup chocolate chips or carob chips*
- water as needed for consistency
Instructions
- In a food processor, combine all ingredients except for chocolate (or carob) chips and water. Blend until well combined. Add a Tablespoon at a time of water until you get the consistency necessary to form thick energy balls. Then mix in chocolate chips and roll into bite sized energy treats.
