Indulging in the rich, nutty goodness of wild rice is a culinary adventure worth savoring. As a Wildly Organic ambassador, I recently had the pleasure of experimenting with some of their premium products to enhance my wild rice experience. In this post, I share a recipe that not only celebrates the inherent goodness of wild rice but also introduces a symphony of flavors and textures.

The Wonders of Wild Rice:

Wild rice stands out for its nutty flavor, heightened richness compared to white rice, and a nutritional profile that surpasses its counterparts. Its endosperm, germ, and bran intact classify it as a true whole grain, offering an abundance of fiber and nutrients. (i.e., this brown rice has more than twice the amount of fiber as that of white rice with 7 grams of fiber vs 3 grams of fiber).

To take the wild rice experience to the next level. I recommend adding a burst of color and texture for a Tasty & Nutritious experience. Think chopped fruits, veggies, nuts, and a sprinkle of herbed seasoning to elevate the dish.

  • Wildly Organic Wood Parched Wild Rice: The secret behind the fluffiness and enhanced taste of this wild rice lies in the wood parching process, which helps it retain more moisture.
  • Wildly Organic Centrifuged Extracted Coconut Oil: Opt for this virgin, unrefined coconut oil to impart a mild, light flavor to your wild rice creation.
  • Wildly Organic Dried Mango: This is a  naturally sweet with a toothsome chewy texture that’s anything but rubbery.

Delectably Seasoned Wild Rice Medley

Wild rice meets a harmonious blend of colors and textures. Let every spoonful be a celebration of wholesome indulgence!
The best part is that you can customize it to your liking and make it more GERD-friendly; and add chicken or edamame to make it more satiating.

Ingredients
  

  • 1 cup raw mushrooms chopped
  • 3 tbsp melted coconut oil, divided I used @wildlyorganic Centrifuge Extracted, Virgin Coconut Oil
  • 1 tbsp herbs de Provence
  • 2.5 cups cooked wild rice I used @wildlyorganic Wood Parched Wild Rice
  • 1/4 cup chopped celery (you can go as much as 1/2 cup)
  • 1/4 cup chopped green onion (optional)
  • 1/4 cup pecans, chopped (or almonds)
  • 1/4 cup dried mango, chopped I used @wildlyorganic Dried Mango Slices
  • 1 tsp curry powder (or Zaatar)
  • 1/2 tsp salt, divided
  • 1/4 cup crumbled feta (optional)

Instructions
 

  • Cook mushrooms with 1 tsp coconut oil, 1/8 tsp salt, and herbs de Provence. Set aside and let the flavors dance!
  • Mix wild rice, sautéed mushrooms, green onion, celery, mango, pecans, curry, remaining salt, and coconut oil. Stir until the symphony of flavors is in harmony.
  • Sprinkle with feta if you're feeling fancy – it's optional but oh-so-delicious!

Customize this recipe to your liking

 You can make this a GERD-friendly recipe, too. Here are some suggestions:

  • Swap pecans for chopped almonds. (Almonds have a neutral pH for those struggling with GERD).
  • Opt for mild olive oil or avocado oil if coconut oil is not available.
  • Experiment with chopped green apple or crunchy pear instead of dried mango.
  • Personalize spice levels by choosing Zaatar over curry powder.
  • Note: Feta is an optional garnish for an extra layer of richness.

Making it More Satiating:

For those seeking a protein boost, consider adding 2 ounces of chopped chicken or ½ cup of shelled edamame. This simple addition provides an additional 8 grams of protein, making the dish more satiating and wholesome.
