Curds and Whey with Lemon Blueberry Swirl

If you love peaches and cream, you’ll likely enjoy this fruit-sweetened inspired Curds and Whey treat. Blueberries and lemon add a sweet and tangy appeal that goes delightfully with cheese, especially a creamy cottage variety.

Whether your variety of cottage cheese is of a large curd – more of a Quark style – or a tight, small curd blend, the fruit combo here will make it a delicious treat. Serve it as a side for your turkey burger or veggie patty or enjoy it for breakfast with a couple Wasa Crisps or a piece of whole grain toast. Either way, it’s a versatile treat you can enjoy alone (as a snack) or with any meal.

Lemon Blueberry Swirl Cottage Cheese

Ingredients
  

  • 1/2 cup cottage cheese
  • 1/2 cup blueberries
  • 1-2 Tablespoons lemon juice or to taste
  • 1-2 tsp of honey
  • Optional: a pinch of cinnamon to sprinkle

Instructions
 

  • Start with your layer of cottage cheese.
  • Add in blueberries, lemon juice and honey.
  • Swirl.
  • Optional: dust with cinnamon to taste.

Notes

If you want a juicier treat, use frozen Wild Blueberries - put them in the microwave for 20-30 seconds until it becomes juicy but still refreshing. Swirl in all the lovely juice with the blueberries!

Disclaimer: I love to use frozen Wild Blueberries because they’re tiny, distribute well, and when slightly defrosted they produce a sweet juice that adds to the flavor and color of the dish (Hence a “swirl”).   1. Looks very nice but I wonder why you post this recipe with the Acid Watchers tag as it contains many acidic ingredients?

    1. Yes, you are correct. I will remove the label as it is misleading. I have been transitioning my website of many years over the past year to reflect more of an acid-watcher appeal. Although there still will be recipes that aren’t. Thus the labels. I will remove. Thanks so much for catching this one. 🙂
