Apricot Pistachio Sunshine Wrap

I think of it as a cross between a bagel and a burrito — because it’s filled like a bagel but it resembles a burrito. But its unique flavor combo gives it an identity of its own. And I call it a “sunshine” wrap because the golden orange apricots against the fluffy white egg wrap from Egglife® give it a cozy, Brunch-y appeal.

The Recipe

Apricot Pistachio Sunshine Wrap

Ingredients
  

  • 1 Egglife® egg wrap
  • 2 tablespoons + 1 teaspoon whipped cream cheese
  • 1/8 teaspoon lemon pepper seasoning or Sumac (to make it GERD-friendly)
  • 1 tablespoon + 1 teaspoon crushed pistachios
  • 4-5 dried apricots diced
  • 1/2 cup baby arugula or baby kale

Instructions
 

  • Place Egglife wrap into the center of a medium plate or a cutting board.
  • Spread 2 tablespoons of whipped cream cheese to form an even layer on top.
  • Season with a few cranks (1/8 teaspoon) of lemon pepper seasoning.
  • Sprinkle apricot (reserve 1 teaspoon for garnish) and 1 tablespoon of the pistachios on top of seasoned cream cheese.
  • Top with arugula
  • Roll tightly to resemble a burrito.
  • Garnish with remaining teaspoon of cream cheese (use to hold it together) and remaining bits of pistachio and apricot.

Notes

Note: If you don't have whipped cream cheese, you can mix 1 tablespoon of low-fat cream cheese with 1 tablespoon low-fat Greek yogurt and blend until smooth.
