I think of it as a cross between a bagel and a burrito — because it’s filled like a bagel but it resembles a burrito. But its unique flavor combo gives it an identity of its own. And I call it a “sunshine” wrap because the golden orange apricots against the fluffy white egg wrap from Egglife® give it a cozy, Brunch-y appeal.

The Recipe
Apricot Pistachio Sunshine Wrap

- 1 Egglife® egg wrap
- 2 tablespoons + 1 teaspoon whipped cream cheese
- 1/8 teaspoon lemon pepper seasoning or Sumac (to make it GERD-friendly)
- 1 tablespoon + 1 teaspoon crushed pistachios
- 4-5 dried apricots diced
- 1/2 cup baby arugula or baby kale
Instructions
- Place Egglife wrap into the center of a medium plate or a cutting board.
- Spread 2 tablespoons of whipped cream cheese to form an even layer on top.
- Season with a few cranks (1/8 teaspoon) of lemon pepper seasoning.
- Sprinkle apricot (reserve 1 teaspoon for garnish) and 1 tablespoon of the pistachios on top of seasoned cream cheese.
- Top with arugula
- Roll tightly to resemble a burrito.
- Garnish with remaining teaspoon of cream cheese (use to hold it together) and remaining bits of pistachio and apricot.
