Rosemary & Sweet Pea Avocado Toast

This satisfying toast is topped with a layer of sweet pea and avocado mash and is delicately seasoned with rosemary infused oil and lemony sumac. For a little added crunch and a smooth creamy addition, I’ve added a sprinkling of hemp hearts and a dollop of Skyr.

To be honest, I can simply enjoy avocado smashed on whole grain toast. But today, I wanted something a little inspired, a little different. Plus I had a can of sweet peas in my cupboard that I’ve been itching to use in some recipe besides a pot pie or stew. It’s summer, so I needed something a little more stylish and al fresco worthy.

Sweet Pea and Rosemary Avocado Toast

My Sweet Pea Avocado Toast is simple to make and I was able to get my 10 year old twins involved. They got to mash the peas and avocado, while I prepped the avocado chunks and gathered the rest of my ingredients, including fresh rosemary from my garden. If you ever wanted to flavor your oil, simply gather some fresh herbs and place them a loose handful into a small mason jar. Add in your choice of mild oil (used avocado oil) and seal the jar. Let it sit for at least a few hours. When you can smell the fresh herbs, you know it’s ready to use.

Ingredients
  

  • 1 slice whole grain toast
  • 1 medium avocado. divided
  • 1/4 cup canned sweet peas
  • 1 tsp rosemary infused oil*
  • 2 tsp Manitoba Harvest hemp hearts
  • 1 rounded tsp of Skyr

Instructions
 

  • Scoop the flesh out of 1/2 medium avocado and place into bowl.
  • Add sweet peas and mash until smooth, with some chunks.
  • Spread mash evenly onto toast.
  • Cut the other half of the avocado into chunks for second layer of toast.
  • Sprinkle with hemp hearts and sumac.
  • Drizzle on rosemary infused oil.
  • Scoop a dollop of Skry (or cream cheese if you prefer) for garnish.

Notes

To make Rosemary Infused Oil:
Gather the fresh herb and toss a loose handful into a small mason jar. Add in your choice of mild oil (used avocado oil) and seal the jar. Let it sit for at least a few hours. When you can smell the fresh herbs, you know it's ready to use.
