Sweet Pea and Rosemary Avocado Toast

Ingredients
  

  • 1 slice whole grain toast
  • 1 medium avocado. divided
  • 1/4 cup canned sweet peas
  • 1 tsp rosemary infused oil*
  • 2 tsp Manitoba Harvest hemp hearts
  • 1 rounded tsp of Skyr

Instructions
 

  • Scoop the flesh out of 1/2 medium avocado and place into bowl.
  • Add sweet peas and mash until smooth, with some chunks.
  • Spread mash evenly onto toast.
  • Cut the other half of the avocado into chunks for second layer of toast.
  • Sprinkle with hemp hearts and sumac.
  • Drizzle on rosemary infused oil.
  • Scoop a dollop of Skry (or cream cheese if you prefer) for garnish.

Notes

To make Rosemary Infused Oil:
Gather the fresh herb and toss a loose handful into a small mason jar. Add in your choice of mild oil (used avocado oil) and seal the jar. Let it sit for at least a few hours. When you can smell the fresh herbs, you know it's ready to use.
