With the onset of Fall, I’ve been taking a break from smoothies until now. I realized how much I love the simplicity of tossing ingredients into my high-speed blender (I have a Nutri-Bullet) and whipping them up into a smooth, creamy drink. And I had plenty of frozen wild blueberries in stock.
Wild Blueberry Smoothie – Oh What a Treat!
I decided to give some Wild Blueberries a starring role in a simple nourishing drink — a quick and easy smoothie with a kick (beet and ginger really adds a tangy twist to this one). And why not?! Wild blueberries can be bought frozen (convenient and available), they have more intense flavor than traditional blueberries and they have 2x the antioxidant capacity of the larger cultivated blueberries (these are tiny and ” such fun (to eat)” according to my little girls who kept nibbling at my blueberries).
Truly, I couldn’t be happier, it’s a beautiful vibrant color and is quite tasty. Okay for truth I intended on developing a Wild Blueberry smoothie recipe for an upcoming contest, but realized there was a theme to adhere to. So instead of losing an opportunity to share (after I got to enjoy this whipped up treat), I decided to post the recipe anyway. With it’s simple, easily obtainable ingredients, it’s now one of my go-to smoothie recipes. Hope you enjoy this as much as I did.
- ¾ cup frozen wild blueberries
- ¾ cup coconut water
- ¼ medium avocado
- 1 small beet (cooked and cooled)
- ¼ tsp ginger root, grated
- 1 Tbsp lemon juice
- 9 cashews
- Place wild blueberries, avocado, beet and cashews into high speed blender.
- Add coconut water, lemon juice and ginger.
- Puree until creamy and smooth.
