Gingered Apple Confetti Slaw w/ Chicken

(#ad) Coleslaw isn’t just for summer picnics and it doesn’t have to be a mere side. Dress it up for fall and make it a meal using a cruciferous blend in creamy yogurt dressing, topped with gingered apples, cranberries, pecans and 3 oz of chopped chicken.

When it comes to greens, I like to vary them up for all the seasons and I like eating salads for lunch. So this fall-inspired slaw becomes a perfect lunch entree with 3-4 oz of chopped chicken (or turkey). And because a coleslaw greens mix is so crunchy and “chopped,” its one of my favorite type of greens to work with. With Thanksgiving coming up, I wanted to bring out the traditional flavors with cranberries, apples and pecans. And to spice it up (not hot, mind you), I’ve incorporated fresh grated ginger in the creamy yogurt dressing as well as seasoned up my apple bits with a sweet gingery glaze.

Since coleslaw is a little sweet, instead of using sugar, I used just a bit of Steviva Blend to capture just enough sweetness for this cruciferous blend. And to make those apple bits even a bit sweeter, I’ve prepared them in a pan with a bit of oil, Steviva Blend and fresh grated ginger. Steviva Blend  is a blend of stevia and erythritol. It’s a great low calorie sweetener (just 2.4 cal per tsp), perfect for balancing the flavors in certain salads, marinaras, and other side dishes. With a 2:1 sweetness ratio to sugar, it’s also great sugar substitute for your holiday treats.

Gingered Apple Confetti Slaw with Chopped Chicken

Gingered Apples Confetti Slaw topped with 3-4 oz of chopped chicken or turkey, it's a perfect lunch entree for the Fall!

Ingredients
  

  • 1/2 medium apple chopped (I used Pink Lady for it's sweet-tart flavor)
  • 1/2 tsp grated ginger
  • 1 Tablespoon + 1 tsp avocado oil divided
  • 2 tsp Steviva devided
  • 1 10 oz package cruciferous chopped veggie blend
  • 5 oz Strained Greek yogurt plain
  • 4 Tablespoons Soy Milk plain, unsweetened
  • 1/4 tsp Celtic salt
  • 1 teaspoon Sumac spice
  • 1 teaspoon grated ginger
  • 1/2 tsp cinnamon
  • 1/3 cup dried cranberries
  • 1/4 cup chopped pecans
  • Optional: 3 Tablespoons sesame seeds
  • 15 oz boneless skinless, cooked chicken, chopped

Instructions
 

  • In a small pan heat 1 tsp of oil.
  • Add chopped apples, 1/2 tsp finely grated ginger and 1 teaspoon Steviva.
  • Cook until apples well coated and soft.
  • Let cool, set aside.
  • In a medium bowl, mix in yogurt, soy milk, one teaspoon of Steviva, one Tablespoon of oil, the salt and the Sumac.
  • Add entire package of cruciferous greens blend and most of the gingered apples (save a couple Tbsp for garnish).
  • Mix until well coated.
  • Optional: Mix in sesame seeds for an added light crunch.
  • Top with the remaining gingered apples, cranberries and pecans, and mix in gently so the apples, cranberries and pecans dot the surface.
  • Divide into five portions and top each with 3 oz of chopped chicken.

Notes

*Low in added sugars. Sugars come mainly from the fruit (and yes, some added sugars from the dried cranberries)
** Coleslaw alone has 180 cal, 6g protein, 4g fiber!

    1. I generally buy Trader Joe’s Cruciferous Blend: kale, Brussels sprouts, Broccoli, Green Cabbage, Red Cabbage. : )
