You may not even believe there is avocado in pudding, let alone the unusual combo of avocado-banana for the base. With the it’s rich chocolate taste, the avocado just disappears. Yet its goodness adds to the nutritional profile of the pudding. With a whole-food base, it’s a nutrient dense treat: It’s got 6g fiber, 3g protein and plenty of heart-healthy potassium.
Don’t get me wrong — I absolutely love avocado. But I’m sure you’ll all heard the scenario: putting a spoonful of mashed potato into your mouth when you’ve been expecting ice cream. Blahh! Mashed potatoes can be great, but not when your craving ice cream. You get the point. : )
The Accidental Chocolate Pudding
I came by the recipe quite by accident, as I was preparing a chocolate muffin recipe. (Still in progress… almost there. It will be more akin to “bran muffin” than one that is super sweet.) Since the muffin recipe is vegan, you can literally lick the bowl without consequence (no raw eggs). So I did just that after I’d combined all the liquid ingredients… and viola! — this pudding recipe was born! So delish, I didn’t even add the dry ingredients. Instead I scooped it up into mini cups and served it up with a sprinkling of coconut flakes and some strawberry slices.
Hint: Strawberries are delicious right now because they are in season. I’ve been eating them solo and adding them to just about everything, including my salads – try this tasty Strawberry & Spinach Salad. Today I enjoyed a Strawberry Ginger Latte from Demitasse cafe. (No doubt, I’ll be coming up with a lower sugared version of that sometime in the near future.) As you can see Chocolate and Strawberries make a lovely combo!
Now if you are waiting for my muffin recipe. You’ll just have to wait. This pudding-like batter was just too good to continue on with my muffin recipe. And so my accidental Chocolate Pudding came to be! It is truly a vegan delight!! — a wholesome treat made with the goodness of avocado and banana.
- 1 med-large avocado, soft & ripe
- ½ medium banana, ripe
- 8 small, seedless dates
- 2 Tbsp cocoa, unsweetened
- 1 Tbsp Cashew butter
- 1 pinch sea salt
- 1 tsp vanilla
- 1 Tbsp coffee, ground
- 3 Tbsp maple syrup
- In a food processor combine avocado, dates, cashew butter, vanilla and maple syrup.
- Process until creamy.
- Add in cocoa, seal salt, and ground coffee.
- Continue to process until smooth and creamy. Mixture will be somewhat thick.
- Portion out pudding into small cups.
- Optional: top with chocolate chips, unsweeteened coconut or your favorite berries.
