Summer’s nearly here and salads are all the rage for their refreshing appeal and tasty flare. They are a great way to get those essential nutrients — keeping you energized and active during those long hot days. Here’s one of my favorites. It’s literally something I tossed together. Pardon the pun. : )
Whether you include berries or tomatoes, or any mixture of seasonal fruits, you’ll be adding to the antioxidant value of your salad. For example: These tomatoes not only pop with bursts of flavor, they also provide vitamin C, beta-carotene, lycopene and lutein — making them excellent for eye health, and skin health. And did you know?: Tomatoes have cancer-preventative qualities for both Men and Women. (And there’s so much more here – I didn’t even include the heart-y benefits of avocado!)
Salmon Avocado & Tomato Salad – A Perfect Summer Eat!
This protein-rich salad has plenty of fiber and antioxidant nutrients. It’s simple, delicious and hassle free.
Prepare, buy poached or used a leftover salmon and chop into medium chunks. Add small colorful tomatoes and chunks of delicious ripe avocado and toss into a bed of Spring Greens. Add a little fresh basil and voila! It’s a go. If you need some dressing – try 1 Tbsp of of simple vinaigrette — a little can go a long way (just coat it well so it flavors throughout). But honestly, once I’ve got a nice combo with some creamy healthy fat (avocado), I really need nothing else except maybe a squeeze of lemon. Your choice – add a little dressing or not – this salad is delicious on it’s own!
- 1-2 cups Spring Greens
- ½ medium avocado, chopped
- ½ cup cherry tomatos
- 4 oz baked, poached or grilled salmon
- 1-4 Fresh basil leaves, chopped (unless tiny)
- Pepper to taste
- Optional: lemon juice or 1 Tbsp of your fave vinaigrette drizzled
- Toss all ingredients together, gently.
- Sprinkle on pepper.
- Enjoy alone or drizzle with lemon juice or vinaigrette.
